Who We Are
From a sourdough starter to three neighborhood bistros — and still counting.
The Beginning
Sourdough Cafe was built on a simple conviction: that slow-fermented bread — made with time, water, flour, and a living starter — is one of the most honest things you can put on a table. That conviction became a cafe in Tomas Morato, Quezon City, where neighbors would stop in for a loaf and end up staying for lunch.
What started as a neighborhood deli evolved naturally into an all-day bistro. The menu expanded around the bread: tapas to share before a glass of wine, handmade pasta using the same organic sour dough flour, and main plates inspired by the kitchens of Seville and Rome. Each dish keeps the same ethos — unhurried, ingredient-forward, unfussy.
The name "Coffee 'til Wine & Dine" is not just a tagline — it is the actual operating philosophy. Sourdough Cafe opens in the morning with specialty coffee and breakfast plates, shifts into a bistro at lunch, and runs deep into the evening with curated natural wine and cocktails. The menu never resets; the table never closes.
What We Believe
Our classic sourdoughs are fermented for 12, 40, or 60 hours — each step of fermentation developing complexity that no commercial yeast can replicate. We do not rush what benefits from patience. Every loaf is proof of that commitment.
Our menu draws from the pantries of Spain, France, and Italy — not to imitate, but to honor. Pulpo a la Gallega, Gambas Al Ajillo, Pasta Vongole — these are dishes built for sharing, for conversation, for a second glass of wine. We use USDA-certified beef, fresh octopus, tiger prawns, and grana padano aged 18 months.
We do not rush tables. Sourdough Cafe was designed for the kind of meal that starts with coffee, passes through tartines and tapas, and ends long after midnight with the last pour of a Sancerre. The cozy neighborhood bistro format — marble tables, warm lighting, an olive tree in the corner — exists to make that lingering feel earned.
What Guides Us
We commit to long-ferment sourdoughs — no shortcuts, no commercial yeast — because the right amount of time creates flavors no additive can replicate.
USDA-certified beef, fresh local seafood, imported European cheeses and charcuterie — we source the best and let those ingredients lead the menu.
Every Sourdough Cafe location is chosen to serve a community — Tomas Morato, Legazpi Village, Proscenium — places where people actually live, work, and return.
Coffee in the morning, wine at midnight — Sourdough Cafe never resets the table. We are an all-day destination because good hospitality does not clock out.
From sourdough-making workshops to food and wine pairing classes, we share the craft openly — because a community that understands its food eats better together.
Our Journey
The first Sourdough Cafe opens at G/F JSB Building, Tomas Morato Avenue, Quezon City — starting as a neighborhood deli and bakery with artisan slow-fermented breads. The brand identity "Coffee 'til Wine & Dine" takes shape from the very first week of service.
The menu expands beyond bakery and deli into a full European bistro — Seville-inspired tapas, handmade pasta, seafood specials, and a curated natural wine list. Sourdough bread becomes the backbone of the entire menu, featured as complimentary bread service for dining guests.
The second location launches at Mayfair Mansion, 116 Perea Street, Legazpi Village, Makati — bringing Sourdough Cafe's all-day bistro to the heart of the business district. The Perea branch introduces the Cheese & Meat Board as a Perea-exclusive charcuterie feature.
The third — and most design-forward — location opens at 2/F Proscenium Residences, Rockwell, Makati. The stunning interior features pleated ceiling fans, a floor-to-ceiling wine bottle display wall, a living olive tree, and curved marble banquettes, earning widespread attention on social media.
Sourdough Cafe reaches 17,000+ Instagram followers and 12,900+ Facebook likes. A fourth location in Molito, Alabang is announced as "Coming Soon" — bringing the neighborhood bistro experience to the South for the first time.
